Richie's California Style Fresh Salsa

When I moved to Melbourne with my Australian wife in 2006, we missed seeing fresh salsa at the local store. In the heart of California, mexican food is integral to the community and salsa is a staple in the mexican diet ... something that is found at every table at every meal, to be enjoyed. A really great salsa is a fresh salsa, made from ripe tomatoes and real chillies, and over the years, I have adopted and perfected my own version of traditional salsa.

 

Always fresh, always handmade, it is our pleasure to introduce California Style Fresh Salsa to you. Sound good? We have sourced the best ingredients from our local area to bring you a real handmade fresh salsa that has no preservatives, no additives, no artificial colours and no artificial flavours. Our traditional fresh red salsa range is available in mild, medium or hot. We also make a traditional version of fresh salsa verde (green salsa), and our fresh guacamole is available in mild and spicy versions.

Chef Tony

My Chef Tony Shiraz Reduction Sauce is loosely based upon an old Italian classic called Vino Cotto (wine boiled). I simply cook down a 2008 Heathcote Shiraz with a carefully selected mix of spices for six hours, thereby intensifying the flavours and evaporating off the alcohol. The end result is a sticky ruby coloured sauce containing the essence of the 2008 shiraz berry.

This sauce may be used both in savoury and sweet dishes.

Use it in savoury dishes where you would use a jus or a balsamic reduction.

After you cook meats (beef steak, lamb cutlets, chicken or game) simply deglaze the pan with Chef Tony Shiraz Reduction. It is up to your own decadence, whether you add cream to finish the sauce or not! Chef tony Shiraz Reduction Sauce is brilliant in cutting the fat in lamb or duck dishes.

Also, try it with a touch of garlic shaken into a delicious virgin olive oil as a salad dressing. The resulting dressing marvelously balances the bitterness of a rocket based salad. Now, … ‘where’s that gorgonzola?’

There is a wonderful Italian word - ‘agrodolce.’  Perhaps ‘word’ is an understatement? It refers to a balance between sweet and sour … a masterstroke of culinary brilliance. An ‘agrodolce moment’ is most commonly upon us when we taste fresh strawberries macerated in a couli carefully balanced with the exact touch of balsamic vinegar. I suggest that you take that ‘agrodolce moment’ to a new height by substituting the balsamic with my Chef Tony Shiraz Reduction Sauce.

I want you also to try it as a topping for pancakes and dibbled over Danish waffles. Or, simply souse it over your favourite vanilla ice cream and curl up on the couch to indulge.

The "Take me home" range includes delicious "Fresh" items like handmade gnocchi, pasta, pizza bases and ready to heat meals including a range of lasagnas, including a gluten free beef lasagne, cannelloni with sauce and home made "Saucy" sauces like the ready to heat sauces.

"Take me home" products are produced by hand in Gippsland and Coburg and where possible draws on local ingredients. Recently 5 acres was purchased in Thorpdale so that more of the ingredients could be grown at the Take me home farm. The farm uses no chemical sprays. The take me home range has no added preservatives or chemicals and uses only whole ingredients. These are the products you would make yourself if you only had the time! "Take me home" makes use of traditional recipes but adds a modern twist to them to keep up with today's trends and also with the demands of their customers.
