Articoke Schnitzel
ingredients
- 6 medium artichokes
- 2 cups breadcrumbs (dry or fresh)
- 3 cloves garlic
- 1 cup parmesen cheese
- 1/4 bunch chopped parsley (italian green leaf)
- 2-3 eggs beaten
- salt & pepper to taste
- 1 lemon cut into pieces
method
- clean & cut the artichokes back to the tender part
- cut artichoke in 1/2
- put in bowl with water and lemon pieces so the artichoke doens't go black
- meanwhile have a pot with water and bring to the boil
- when water boiling add salt to taste
- cook the artichoke until tender
- strain the artichoke and let cool on a tea towel
- place breadcrumbs, parmesen & chopped parsely in a boil
- then cover the artichoke pieces in beaten egg
- then coat the artichoke pieces in breadcrumb mixture
- shallow fry in olive oil
