Fresh Kiwi fruit and yoghurt Winter fool
ingredients
• 4 Kiwi fruit
• 2 Pears
• 4 Diced Macaroons*
• 200g Shaw river yoghurt
• 100g Pistachios
method
1. Slice kiwi and pears
2. Using fancy glasses or martini glasses
3. Layer all ingredients to top of glass spooning carefully so all ingredients are easily seen
4. Finish with a layer of yoghurt and kiwi slices
5. Chill and serve with Champagne
*Macaroons
• 4 Egg whites
• 1 cup fine sugar
• 1/8 tsp Cream of tartar
• 1 tbl Self raising flour
method
1. Whisk whites and c.o.tartar till stiff
2. Add sugar/flour whisk till shine
3. Spoon onto baking paper tray
4. Bake 200 celsius 20 mins / 100 celsius 2 hours – should be golden brown and cracked
5. Store in airtight containers
