Lamb Kofta
ingredients
• 1 kilo lamb diced
• 1 bunch coriander
• ½ bunch parsley
• 1 clove garlic
• 1 lemon zest
• 50 g Sumac
• 1 chopped chilli
• Salt & pepper
method
1. Wash all herbs and rough chop
2. Mix diced lamb with all ingredients
3. Mince through a fine plate mincer
4. Correct seasoning
5. Roll into long shaped sausage logs
6. Place on skewer
7. Oil & season
8. Sear on a hot grill and finish with lemon juice and more Sumac
9. Serve with tabouleh
